This may not be very helpful but if you like the demo, buy the game. It rocks! The game comes w/ a Linux installer on Disk 3. If I were you, I would be searching the frums on the games site. There's tons of Linux threads over there.

I would be extremely impressed if you got wind32 UT 2003 working with wine. No one's going to expend a serious amount of effort in doing this, since there are linux binaries available. If you want to run it in linux, you will need to obtain the linux version.
But if your dead-sett on running the windows version on linux, get WineX from transgaming.com. WineX is Designed for Gaming, while wine is designed for general apps.
