I go with pkg mgr because it's quicker, easier and it handles dependencies and (should) work immediately.
Of course you'll need to customise it, but the toolset itself will work.
There is little reason to compile the source, short of needing to integrate a security patch or new functionality. So I would simply use whatever pre-packaged Apache/Php your distribution of choice provides.
