how to configure alternate mail relay gateway in ubuntu


Hello,
I have ubuntu lts 10.04 with 2 nic eth0=LAN and eth1 which will be a broadband WAN connection next week.
Now I still have a gateway/firewall with ip 192.168.1.254 and all traffic goes there outside to a DSL modem.
I would like to configure the server to act as server/router/firewall so therefor I will need to configure eth1 as dhcp to obtain a dynamic wan ip and then I need to activate ipv4forwarding in the server I guess?
But this new ISP provider on eth1 blocks incoming smtp and only accepts outgoing smtp to their own relay so therefor I will still need my DSL connection to send outgoing mail and to receive mails.
The receive part is not difficult because all mails to my domainname are relayed from my site hosting to my DSL connection and goes through my firewall to my ubuntu server.
But outgoing mails should be going to my DSL also instead of going to the default new gateway on eth1
I also will need to change the lan dhcp config I guess to tell the clients to use the new gateway instead of 192.168.1.254 ? But how will this dhcp config look like? or will this new gateway IP be the same IP as the server 192.168.1.1 ?
Maybe someone can give me some steps here to tell me how to set this up?
