To be sure you don't lose anything, backup your current data. If there is an export option in Evolution, use that to save your email and contacts. I now use thunderbird and don't have evolution on my system to check out it's features to tell you. Just look at your options in it and see if it allows for exporting or saving emails and contacts.
Actually I'm lazy and backup the whole evolution folder and subdirectories/files in my users home directory. Copy/Backup, upgrade or move to a new computer.. copy into users home directory, make sure permissions are set and fire up Evolution and it usually works like a charm.
