Email. Is something like this possible?

I currently download my mail from gmail into thunderbird on windows. What would be cooler, is if I had a mail server on one of my linux boxes retrieve my mail, and I then check my mail on my linux box.

That part probably isnt hard at all. The problem would be importing all my mail (years and years of it) that I currently have in thunderbird into my new mail system/server I would setup in linux.

Is this doable?

If you have Thunderbird on Linux, you can simply copy your Thunderbird data files from Windows to Linux. That's the simplest solution.
Why do you want a mail server?

i think it would be cool to have a local mail server, to store and backup my mail locally instead of it all being on gmails site.

I think fetchmail could be used to save it to a local mailbox

But Thunderbird does that too... a mail server makes sense only if you offer this service to other machines. Will you?
