customizing gnome


How can I customize the applications that show up in the Applications menu?
I want do such things such as change the icon by the name, delete useless items, rename items, and movie items to another submenu. Any idea how to do this?

open up nautilus and go to the directory

applications:///

I can't change anything though. Everything has read and execute permissions only, no write permissions.
