The screenshots provided show an initramfs prompt, nothing more.
Unfortuantely, no info about what the problem could be. Searching the last error message lists a few things you can try, but I'm not sure it has anything to do with the boot failure.
The error " failed to get canonical path of cow" is very common and means that you are attempting to install Grub to a 'live' environment, the install DVD or USB which will never work. You need to use chroot to get into the install system to install Grub. The link below discusses re-installing Grub and has a section on using chroot (Section 2.2.5).
I think the problem hear is you lot are using ubuntu and I am using mint!
Mint is based on Ubuntu; in most cases Ubuntu-specific solutions apply, and this really does not look like it isn't one of those cases.
But of course you're always free to apply the search phrases presented here to mint, and mint only.
BTW, they have a very active forum --- aaaaand of course you double-posted, which is often frowned upon.
In any case, those two threads combined, it seems like you have enough material to chew on for a while. Roll up those nerd sleeves and get down to it!
