Separate server for mail?

I have a server, and sometimes spam mail can take a hit on the server. I was thinking about setting up a new (physical) server solely to handle mail.

Is this a good idea? If so, how would I go about doing this?

You can setup a SPAM filtering SMTP gateway. I've done it.
