CUPS/AVAHI - what did I miss?

I've put up 'air-print' servers using CUPS and Avahi, and they required the configuration of a /etc/avahi/services/printer.service to have a printer show-up as available on an iPad.

I just setup a Ubuntu 3.2.0-23-generic server, connected CUPS to a bunch of networked printers, and with no /etc/avahi/services/printer.service file, the shared printers in CUPS are showing up on the iPads.

CUPS v 1.5.3
Avahi-daemon v 0.6.30

What changed?
Why is this happening?

On a side note; without the .../printer.service file, I can not configure the print options that are presented to the iPad. The CUPS printer/job options are not being presented either.
If something changed, where is the new configuration file?
Thanks
