Well... it's not. Both Linux and Windows are stable enough and depending of your skills, both can be equally secure. Out of the box, Linux is more secure though. The only real advantage I can think about is that with Linux, you won't need to reboot the system when applying patches/security updates (if you are not upgrading your kernel, of course). Another good thing is that you can run Linux in command-line mode only, thus saving resources for other crucial operations, as running the server itself.

If you don't care about uptimes (and in a game server it's not all important as it should be with a Online store, for example) and want to install things by double-clicking and/or lack Unix administration skills, Windows is fine. If you do, need a server with higher uptimes, less hardware demanding and low costs and has the skills/willing to learn Unix/Linux, than Linux is the way to go...

EDIT:

By the way, I just saw that this is your first message here. Welcome to LQ.org

well, linux is free (mostly) which i guess could be "better", but other than that i dont see anything _better_ about it. i use windows xp to run a machine as a super nintendo and when i tried it with linux it was slower. the gui thing, i guess is true, but you can shell windows, or run classic mode, which imho looks better than that luna crap anyway.

but yeah, linux isnt _better_ in any distinct way. it just works better for some people.
