remove items from menu redhat 9

Hi,

I just switched from mandrake 9.2 to redhat 9. I observe that system settings were easier in the former. I am trying to change the menu settings like adding items removing items, changing properties. I have tried doing this in root access also; without any success. Can someone give any pointers?

Thanks
