My mail is going out from my backup server at the moment. I want to move it to my main live server. How do I go about this? Do I need to move sendmail from one to the other?

That would depend on how you have your clients setup also. If you have all your clients pointing to the backup server you will need to move them to the new server. As for the configuration I would just scp the files from the backup server to the new server then restart the sendmail service.
