Monitoring System Files/logs


I'm charged with monitoring log files in the server. I was wondering if anyone knows a great way to do that.

What I was originally going to do was write a simple script that monitors the timestamp of each log or file I want to watch. But, I want to go a step farther and log the new log entries to a database. Parsing is not a problem, nor sending to a database.
But, I am wondering if there is a way to automatically send the new entries to a database (or anywhere) as soon as it comes in.
I've heard of FIFO and LIFO. But there seems to be limited documentation.

Has anyone gone this route before?
