Logging incoming/outgoing mail - how to?


Ok this is probably going to be one of the most noob questions here, but how do I log all emails, incoming and outgoing? I have the /var/spool/qmailscan/qmail-queue.log, but that doesn't seem to log everything. I have two questions - how can I make this log bigger, to allow more logging, and how can I make sure to log ALL emails?
