kept waiting for it to restart on it's own at end of ubuntu virtualbox never did
I started install with ubuntu studio-22.04-dvd-amd64.iso.
I picked minimal install,
checked box for update during install.
The install ending said wait for it to restart ubuntu, kept me waiting around a bit, had to powered off via vb to restart. Is there a reason it didn't restart on its own like it's message said at the end of install rather than forcing me to power off in virtualbox menu?
1. probably you would need to wait a bit more.
Usually there is a way to check what's going on during install, for example that update is running (or something else), but now you can't do that.
2. probably there was a bug somewhere.

APIC is meant to be enabled by default in VirtualBox (see below)

ACPI is the current industry standard to allow operating systems to recognize hardware, configure motherboards and other devices and manage power. As all modern PCs contain this feature and Windows and Linux have been supporting it for years, it is also enabled by default in VirtualBox.

I didn't request any auto update, it was actually a restart of it's own accord, deemed necessary by the install iso process right at the very end.

I did not see a terminal gui on the screen it just had words to the effect of "wait for a restart" at the end of the install for the iso. Your saying I could interrupt that restart and access a console? What key on keyboard would have allowed me to do that?
