'trapping' relayed messages

Hello!

We have a Linux qmail server acting as a mail relay. Is there anyway to 'trap' some of these messages on the server. We want to be able to see if anything is on the subject line for these outgoing emails. My initial thought is to do something with iptables to see if it can block outgoing email traffic and the messages will 'stop' on this qmail server and build up so we can have a look at the emails. But i'm not sure how to do this with iptables and whether it would work or not.

Any thoughts or ideas?

Much appreciate your help in advance!
