Now I've installed v20.3 I see there's a pre-installed program called Document Scanner.
I've tried that, but it doesn't find the scanner on my Brother MFC-J430W printer/scanner.
I tried searching specifically for Simple Scan software, but it says that's the one I already have installed - "Document Scanner.
When I used it with v18.3, I had to set it up to connect using an IP address. There doesn't appear to be that option with Document Scanner.
Or is there an option somewhere?

Is that scanner connected via USB? Then issue a "lsusb" in a console and look for your scanner. If it is connected via WLAN or cable you might have to look at your router or if it is a direct connection try the network manager (or whatever it is called there) of Mint.

No, the printer/scanner is connected via Wi-Fi.
I don't understand how my new v20.3 Cinnamon found the printer without me even having to ask it, but the scanner program just can't.
The reason the printer is found is due to this addition ippusbxd. My HP 5530 is always found. That said it can cause some priters not to be found. Bothers models have driver downloads for linux.
On this list a driver install tool download it than double click on it follow the prompts. If it can not install the drivers let us know. Might have to remove the ippusbxd. Or download each driver printer and scanner but we will see.

The page even recognised my printer.
The software told me I already had the same version already installed, so it seems that's not the reason?
Head back to the bother drivers link on my 8th post and download both the printer and scanner drivers separately try to install the scanner driver only. I am thinking the driver tool is detecting the driver for the printer than stops that is my theory.
If the above fails than try this.

Nothing worked, so I tried to remove the printer as you suggested.

Than if that package I suggested to be removed is not installed than download the scanner driver which were updated last year. And see if that driver will install.

I'm confused.
I already tried to download the scanner driver - "Scanner driver 64bit (deb package)" - this one yes?

How did I try to remove the printer from the printer configuration tool? Did I? It's my fault for asking two questions about the brightness control and the scanner at the same time. I've lost track of what I did. I remember following the instructions which for one reason or another haven't worked.
I did this, only to find it wasn't installed:
