I went ahead and bought the E5-571-35LV. I've posted my results with it here:

Summary:
- Debian 7.6=FAIL, Debian v8 Testing=OK!
- Bluetooth: Doesn't work out-of-the-box, but I haven't tried fixing it, so maybe it's an easy fix.
- Camera: Seems to "sorta" work, but again, I just tried it once on VLC and that was it. So it might be something simple.
- Screen Brightness: Works, but the default configuration is wrong. Everything *tries* to adjust the screen brightness via "/sys/class/backlight/acpi_video0/" but that does nothing. The brightness *does* change if you use "/sys/class/backlight/intel_backlight/" instead.
- Secure Boot: You have to set a BIOS password before it will let you disable Secure Boot. (And it doesn't actually bother to *tell* you that.) You won't have to enter the BIOS password just to boot though, only to get back into BIOS setup.
- Everything else seems to work fine
Overall I'm pretty thrilled with it. (Especially since Linux is now my primary desktop OS, not just secondary machines and servers. Yay!
