Using Linux on an Opteron wouldn't be under using it at all, just use a 64bit distro and if it's dual-core just make sure the kernel is compiled with SMP support and it'll run like a wet dream
I had a dual opteron a while back, and it flew, but make sure youre using a 64-bit distro. You may have to recompile the kernel with the opteron specifics. I think I had to in order for it to behave properly, but it worked and was extremely fast.
