updating kernel

I yum updated my kernel which was successful. I rebooted
and everything looks good.

However, why does the rpm database show the old and new kernel packages as installed and why does /etc/grub.conf list both?

Is this normal? Should it be cleaned up. If so how?

I updated 2.6.18-238.1.1.el5 to 2.6.18-308.el5. ie rh 56 to 58.

This is normal and for your safety. This way you can test the newer kernel and have a fallback for the case that it doesn't work correctly on your system. If you feel confident that the newer kernel works flawlessly you can use your package manager to remove the older kernel, if you feel the need.
