oops-deleted binutils-build

This is my first time installing, and I don't know what I was thinking but when it said it needed binutils-build in its 2nd pass state in the next chapter, I deleted it after I finished the next *section*.
Very bright.

I'm tempted to open up another console as user lfs do the 2nd pass instructions over (I left the source directory up, does that help?) but I'm thinking that might not help.

The book says not to worry about it, but I'd like to be able to fix this. How would I fix this?

Just do as the book suggest and you should be alright (it will still link a little against the host environment but the book says it'll work).
