Using what? A program, a script, or someone's observations? Haven't bothered to ever do this, but I'm betting that something like the ls command would have a switch where it gives you a result of the number of files.

see man ls and man wc

What are you trying to accomplish? On my mailserver using qmail and Maildir mailbox format, there is one file for each mail user. I believe that's the case even if using the mbox format, as that format puts all mail messages in one file for each user.
