I have never had a stability problem with either Gnome or KDE. KDE 4 was very unstable when it was first issued but people who stayed with KDE 3.5 avoided those problems.
It's hard to say as other factors might affect the stability of your system: your video driver, the stability of individual packages that you installed, etc. KDE4 was indeed somewhat unstable - for this reason I went back to KDE3.5 - I've heard that there has been much progress since KDE4 though, and 4.2 is much more stable now.
