I feel your pain; I went through a similar Google hunt for Postfix and Fetchmail tutorials, and there seems to be a lack of good ones. However, I eventually decided that Postfix and fetchmail for a single user was simply overkill. I settled on using
smtppush.py instead of Postfix/Sendmail and
getmail instead of fetchmail. Both are Python programs, and are much easier to configure.
