I've noticed that almost every screenshot has a sidebar that is monitoring CPU, network card, time, etc. IS that something that was done manually or is there a program to do all that for you?

It is gkrellm available from http://web.wt.net/~billw/gkrellm/gkrellm.html there are various plugins available for gkrellm, the links are on their web page

And if you want gkrellm to monitor your hardware (cpu temp etc..) you need to install lm_sensors.
