Everything you want to do can be done using the “manually partition” option in the FC4 installer.

As a general point about software raid, you don’t usually mirror the entire disk as a single unit. You typically mirror the individual partitions, with the exception of swap which is not usually mirrored. That will give you a bit more flexibility if you want to change the disk structure at a later time.
You should start a sham FC4 installation so that you can see how it works. Until you answer the “yes” question after selecting which packages to install, nothing is written to the disks, so you can abort the sham installation at any point along the way.
Basically, you will set up the first disk partition structure like you would for a normal installation, except that you will “format” as “raid” instead of “ext3" for the partitions you want to mirror. You can then clone the first disk partition structure onto the second disk. After that is done, you can create raid pairs for the partitions you want to mirror and format the new raid devices as ext3 or create LVMs as you see fit.
