I've changed the UID for user "Native" (ex-eric) from 1000 to 1005 and clicked "prevent login"
I've changed the UID for (new) user "Eric" from 1002 to 1000 (kept the /home folder)

If it all works, then that might be the answer to all my questions, except "why it doesn't work straight from user creation at install"
