I recently updated my kernel to 5.1.10, which went fairly smoothly (that may or may not be relevant). After I rebooted my keybinding for the `hide_window` option in my terminator console stopped working (<Ctrl>backslash). All of the other bound keys work as expected, but this one in particular isn't functioning.
I'm pretty sure it isn't anything at the hardware level of my keyboard because if I try to reset that keybinding it correctly picks up that I'm hitting <Ctrl> + backslash.

Ok, from what I gather here you already have the keybinding working already since you reset it. Another question: when you updated the kernel, did you update any other packages as well? Because if you updated, say your desktop environment and it started using a new keyboard shortcut or something.

Ah, sorry if that wasn't clear (and for the extremely delayed response). I don't have the keybinding working. What I meant was that when I try to reset it (back to Ctrl-\) it registers that I'm trying to select that option, but it has no effect. In other words, when I'm in my normal terminal session hitting Ctrl-\ does nothing, whereas pre-update it worked as expected.
