Understanding the GCC and binutils configuration options

This is not exactly a question about using LFS, but I don't understand, where exactly did the LFS instructions for building GCC and binutils come from? I can't seem to find where in the GCC documentation it explains all the options and configuration files used in the LFS book, or even how to build a cross compiler and separate runtime libraries at all.

I once built LFS before a long time ago, and now I'm curious about trying it again and maybe actually using it, but I'd like to at least have a general idea of what I'm doing. The LFS book doesn't explain why it does what it does, and I'm surprised about how I can't seem to find any related documentation. Does anyone know and good explanations or pages that I'm missing?

AFAIK, from long time experience with building compilers : The LFS people.
Building compilers some thousand of times, new tricks / methods are learned.

Somewhere in the (old?) gcc documentation, the LFS method was recommended by the gcc people.
