Ubuntu Studio has Xfce desktop environment, and Ubuntu MATE has MATE (obviously). But you can install MATE in Ubuntu Studio, if you want, or you could also install the Studio applications in Ubuntu MATE. So, they are basically the same thing. (Same pig, different lipstick.) The decision which to use basically comes down to which desktop environment you prefer, and your comfort level installing your preferred applications.
"Bloated" is a word that means different things to different people. Some might argue that Ubuntu Studio is "bloated" because the DVD image is 2gb+ containing dozens of applications for music, video, photography, 3D design, etc. But if you are a creative person planning to use all of those applications, then they're not really "bloat" at all, right?
Why not burn a couple of live DVD's and try them both, see for yourself?
I use Ubuntu Mate and have never had a crash,hardware issue or any other problem.
With either, you can always uninstall anything you do not want.
I have shaved off about 100 megs.
I always get random lockups (usually last about 5-10sec) with Mate... I have no idea why, but it's annoying. Sometimes they are very frequent, other times, I'll go hours w/o one. It happens no matter what distro I put Mate on. Sucks to, because I really want to like Mate.. but XFCE is fine to.
mate is window manager. Studio is a list of apt-get stuff anyone can add to any ubuntu distro. This is why the sudo asylum still lives. one is an apple one is an orange. best to ask what window manager do you prefer when installing Ubuntu studio.
