Take a look at the Linux Security references thread under the security basics section (post #2). There are a number of security checklists and guides that should give you general hardening info (like minimizing installed software, using tcp_wrappers, turning off un-needed daemons, etc). For added protection, look into hardening with grsecurity, LIDS, SELinux, RSBAC. And most importantly, don't forget to apply security patches!!!
