Gnome Menu - Can't Edit

I would like to edit the menu in gnome a little, i'm aware that there is a built in editor but it offer very little options and you are not able to add new programs. So i'm looking for the config file or simillar where the menu info is so i can change it manually. Gnome Version 2.18.1

I can't find the right file in
~/.gnome2/vfolders - nothing there
/etc/gnome-vfs-2.0/vfolders - include this
Code:
<VFolderInfo>
−
	<Folder>
<Name>Root</Name>
<Parent>applications-all-users:///</Parent>
<!-- Debian -->

include-menu-defs

</Folder>
</VFolderInfo
I found /usr/share/applications/defaults.list but unsure what to do with it.

I don't know if it's in Ubuntu or not, but there is a file on debian named /usr/share/doc/menu/html/index.html which should provide some help. One of these days, I'm going to dig into it, but it hasn't happened yet.

The Gnome Alacarte Menu Editor allows for adding and removing apps.
