to starts an X server you can do a "startx" from the command line, if you want the desktop environnement to be runned by default at boot time, then do a "update-rc.d gdm defaults".
the last way to do it is to start the desktop environnement with "/etc/init.d/gdm start" but why would you need a gui on a server ? |
gui
startxis the command to start gui. Or press ctrl+alt+f7

As far as I know, Ubuntu server does not come with a GUI, so you need to install one on your own. You can use aptitude to install ubuntu-desktop, kubuntu-desktop etc. |
