Well,
- First, welcome to the *nix world.
- Second if you are new to Linux I would recommend you to use a virtual environment like wmware or virtual box.
- Third, learn the basics and the logic of the Linux Operating System (this WILL save you time and many many trouble :hattip:)
Below is a book that I would recommend you to start with:

Here are few more tips:
- Be patient, learning takes time
- DO NOT use graphic interface as this is the worth way to start learning linux (You really need to understand what happen under the hood otherwise one day you will get stuck big time)
- Don't learn it by heart, but understand what you do and try to get the logic behind it.
- Don't give up when it doesn't work, try to be logic and seek for help and answers on internet.
- Read the documentations (I never read as much as since I've started using Linux :) )
- Be patient.
- and a last one for the road, be patient.

For a lab example here is an idea:
- Setup an internal web server as well as web proxy with squid. (if you leave every thing by default that should be fairly easy)
- If you want to add some spices to it, try to do this:

- Add some more mail boxes
- Add quota to these new mail boxes
- Implement a Web surfing quota for some users.
- Only allow your user to surf only on some domains.
- Harden the box (more and more company will ask you to do this)
