so that i can have any www.cnjcafe.com or mail.cnjcafe.com etc. etc.

and that wont ask me to sign up for othet bullshit

Well GoDaddy will register your domain name with them, during the registration process, you would need to give 2 nameservers for your domain. Alternatively you can use godaddy's own domain administration facility which is provided free of cost. You can use this to configure your MX entries, host entries etc.
