Hi, First of all, I'd suggest you leave upgrades to the package manager, unless you want to fiddle arond with system internals and learn... From kernel.org, you downloaded the sources to the kernel, meaning all you have to do is compile it; and it'll select automatically the right architecture.
First youu must create a .config that suits your hardware/software needs. you do that using the "make menuconfig" command in the directory you untarred the sources to. Once you have selected all you want, just run make && make modules_install. then copy the arch/x86_64/boot/bzImage to your /boot directory, and modifying your grub.conf accordingly to what your kernel needs to boot.
All this may sound complicated, but it actually is pretty easy : just search google for a kernel compiling tutorial.
Beware : Do not simply edit grub.conf entries, do another one so that you always have a fallback to boot from.
