I installed the edubuntu server and removed the kids stuff. Local devices work great So far the biggest issues I've encountered are:
1- Skype audio doesn't work. Supposed to be fixed in Feisty Fawn release.
2- Printing to a HP Laserjet connected to a D-link access-point doesn't work. Not a problem, I'll just plug the printer into the server.
3- Can't use serial mice on the thin clients, they aren't recognized by X. Still
researching this, but if there is no fix, I'll use USB mice.
4- Boot-up could be quite a bit faster, it takes almost 50sec. on a 1GB network.
5- Firefox crashed when accessing flash sites, fixed this here:

Ubuntu's LTSP is evolving slowly and I think it has reached the time were it can be implemented on a network. I'm sure most of the above issues can be worked out soon.
Now I wanna find out how to make those thin clients to not load unnecessary drives and peripheral ports...
