If you go to: system > preferences > themes, you will see a number of different themes if (like most people) you don't like the "human" brown theme.
To install themes from gnome-look.org, you can download a theme and extract it, then drag it to the system > preferences > themes window as described here:

You can also move the theme to /usr/share/themes as described here for system wide access for all users:

The themes can also be copied to ~/.themes for just a per user access.

You may find that some of those themes on gnome-look.org work better than others.
