You're stripping down after you've already installed...?
Or you want a stripped-down version to install (i.e., you have not yet installed Ubuntu)?

So you haven't installed it yet, I take it.
It's easy. Boot up the installer CD. When you get to the boot prompt, type and press Enter. This will give you a rather minimal (server) install. After you finish installing Ubuntu, log in, and type
Code:
sudo apt-get update
sudo apt-get install openssh-client openssh-server apache2 ssh mysql-server
