I recommend rsync. Here is an explanation of how rsync works.

There is also dirvish, which uses rsync, and is easier to setup.

Incremental restores

I have done some work with rsync and grsync. My concern is being able to create incremental backups that will allow me to restore from a specific date and time.

I am looking for a program to replace a very good backup system that was created by a company called "Net Integration" and used in a product called "Nitix". IBM bought this product, changed the name to Lotus Foundations and after several years has dropped the product. To use rsync as a substitute I think a good amount of scripting will be required.

I will look into dirvish to see if this requires less programming. Thank you for your replies
