Yes. I would recommend to enable AHCI mode in the BIOS before installation, if possible (not all older machines support AHCI).

No, you could also use a 32 bit version with a PAE kernel. This would limit the address space per application to 3GB, but you could use the full 8GB for the OS. But since distros compiled for 64 bit machines normally are better optimized (using extensions like SSE2), are faster for many applications due to a higher register count and don't have memory limitations per process I would recommend to go for 64 bit. Even if you have to use pure 32 bit applications (like for example Skype) Ubuntu will automatically install a compatibility layer.
