What applcations are you trying to use? If the applcation are checked in the menu then you should be able to use them. You might need to issue this command

killall gnome-panel

Thne the applcations should show up and you should be able to use them.

If you did a "server" install, it's a minimal install and no apps are installed. Servers don't use stuff like x-windows and openoffice.... If you want those install a deskto install.

- Will this preserve the server environment?
- Is this a good way of setting up a machine as a desktop/server appliance?

thanks

All installing ubuntu-desktop should do is install Gnome, X and other apps, you'll still have all the other apps and setting you had before.

if it's not installed, you could get the ubuntu-artwork and ubuntu-sounds packages, that has the default themes.
Also you could try installing all the dependences of ubuntu-desktop (there are 252 dependences) and see which one fails and decide if you want/need that package.
