Hello,
In Ubuntu when you update does the
Gnome desktop also get updated to its current
version.

Once Ubuntu has been released, it only provides security updates. Unless you are upgrading from one version to another, then you are unlikely to get new versions of packages (well official packages) unless they need to be updated due to security issues.

No, the GNOME desktop does not get updated when you do a apt-get update. It will update when you do a apt-get upgrade.

that too when u have enabled the repositories in ur sources.list
