If you have the vnc server setup to handle more than one display, use a different port.

5900 = display:0 (desktop)
5901 = display:1
5902 = display:2

and so on...

where do I cahnge those settings?

I know I can fire up a vncserver with
vncserver :<display_number>

however how and where do I tie that to a particular port?

Should work like the following:

If you set to display :2, then you simply use port 5902.

In other words, the tightvnc vncserver is smart enough to tie displays to ports.

Try that and see if it works...
