while I do not know a script fulfilling your requirements, I recommend to create your own piece of software. You could e.g. call "pmaps" or "cat /proc/<pid>/status" in regular intervals and therewith collect various statistics about the RAM usage (event about details).
Please let us know if you find or create such a script.
