Should I be writing some kind of script for new Installs?

I'm about to re-install due to finding out about the misaligned cfdisk paritions. Fortunately it hasn't been too long but I have made some changes to the system and am collecting my notes on what changes have been made.

Do people usually create some kind of script to make this process easy?

I'm new to administrating a home slackware server, but so far I have things like:
-copy backed up /etc/skel files
-edit or replace /etc/hosts file for hostnames on the local network
-change default tty font by editing in /etc/rc.d/rc.font

etc

In this case, I'd put all of /etc into a tar file that you save on some other machine. Reinstall, copy the tar file back and expand it over your new /etc directory. That should get most of your configuration correct.

I would not reinstall at all. Make a backup of your system using tar, repartition, restore the backup and reinstall the bootloader.
Just because you move some partitions a few sectors you don't need to reinstall.
