I didn't realise you were analogue. I've been talking digital (dvb).
I have no experience with analogue. Off the top of my head I'd try using cat only because I have used it with digital devices.
You can cat any file and remember devices are files in unix/linux. If you do "cat /device/mouse > mouse.txt" you will get the output of /dev/mouse provided you have permission as in below:

So if you know what your analogue TV device is you can use cat to save it to disk. I can do this be locking on to a digital channel with tzap then cat'ing the device to a file like this:

I don't know if you have anything like tzap (which is for dvb-t) to use with an analogue card. Likewise, I don't know whether or not you can do something similar and/or whether you can watch it while saving it which would mean two applications accessing the same device at the same time but maybe this will give you some ideas.
