The problem was the disk protective mbr being flagged as boot. I thought the gdisk output I requested in post 20 would give a warning about it, but didn't. I was looking to see if the efi partition was flagged as esp when I requested the parted -l and seen the pmbr_boot flag was set. I came across this problem a while back with an asus laptop that wouldn't keep the efi entries in its nvram because of the Protective MBR boot flag being set. The efi entry in efi firmware would disappear similar to your elilo entries disappearing.
That flag is to allow a gpt disk to work on older legacy mbr systems.
