How do you setup external journaling ?
 

The requirements are as follows:

Setup 3 partitions on each array.
one 500MB for swap
one 500MB for external journal
and the remaining space for /

I have formatted the partitions as ext3, which I know does journaling, but how do I place the journal of / onto the other 500MB slice?

There is an explanation how to do that in the man pages:
man mkfs.ext3

Look in the section:
-J journal-options
