How do you change the color of gkrellm and add new themes? I have searched and couldn't find anything to suffice so now I bug you guys.

As you'll notice from the gkrellm configuration screen, the default place it looks for themes is ~/.gkrellm2/themes

So you'll have to download the theme you want to use and unzip it in that directory. Then right-clicking gkrellm and selecting configuration, you should be able to preview/use it.
